1. 개요

김에 쪄서 익힌 음식.

일단 만터우처럼 찜기에 넣어서 찌면 다 찐빵이라 부를 수 있지만, 일반적으로는 밀가루 반죽에 팥소 또는 고기와 야채를 섞은 것을 넣고 찜기에 쪄서 익힌 빵을 찐빵이라 부른다.

2. 역사

한국에서 찐빵이라 불리는 음식의 원형은 일본의 '만쥬'라는 음식으로, 1341년 원나라에 유학을 갔던 일본 승려 류잔(龍山) 선사가 귀국하면서 함께 일본으로 온 중국인인 임정인(林淨因)에 의해 만들어졌다는 속설이 전해진다. 그는 절에서 만두를 빚어 생활했는데, 당시 일본은 육식금지령으로 인해 고기를 먹을 수 없었기 때문에, 고기 대신 단팥으로 만든 소를 넣어 만두를 만들었다고 한다. 이후 불자들 사이에서 이 만두가 큰 인기를 끌었고, 이 '만두'가 일본의 만쥬(饅頭)로 발전하였다. 그 후 구한말과 일제강점기 때에는 만쥬가 조선으로 건너와 찐빵이 된 것이다.출처 원래 한반도에도 고려말과 조선시대에는 찐빵과 레시피가 비슷한 상화병이라는 떡 요리가 있었지만, 찐빵이 상화병을 대체한 것이다.

다만 중국에서도 똑같은 음식이 있는걸로보아 이쪽이 원조일수도 있다.

3. 상세

일본에서는 츄카만(中華まん, 중화만두. 삼국지의 제갈량이 만들었던 그 만터우에서 유래했다고 한다.)이라는 원본 음식이 있다. 호빵과 마찬가지로 단팥, 고기, 피자 등 여러 가지 종류가 있고 각각 XX만이라는 이름으로 편의점이나 마트, 인터넷 등에서 일상적으로 판매된다. 일본어 위키백과에 따르면 일본 첫 판매는 1915년이라는 설과 1927년이라는 설이 있다고 한다. 비슷한 어원으로 비롯된 만쥬가 있다. 그냥 만쥬는 좀 더 화과자의 성격이 강하며, 츄카만은 니쿠만, 앙만등 다양한 바리에이션의 중화 만쥬를 의미한다.

중국에서 밥 대신 먹는 속이 없는 밀가루 빵인 만터우(饅頭/만두)가 시초이며, 이것을 일제시대에 들여와 일본 고유의 팥소를 넣은 일본음식이 앙망(안만)이다.[1] 우리나라에도 일제시대에 들어와 찐빵으로 소개되었으며 일부 가정에서 만들어 먹던 것이 분식집에서 만들어 팔리기 시작했고, 공장에서 대량생산한 것도 일본이 먼저다. 애당초 단팥이란 개념 자체가 일본에서 들어온 것으로, 우리나라는 팥을 먹을 때 팥시루떡이나 팥밥으로 먹거나, 팥죽에 소금을 넣는 것이 전통이다. 일본에서는 유래 자체가 고기 만두이다 보니 속에 고기를 넣은 것이 더 대중적이지만, 우리나라에서는 경제적 이유로 야채호빵(니쿠만)이나 피자호빵(피자만) 등은 상당히 나중에 카피됐다. 즉 찐빵이나 호빵이나 모두 일본에서 들여온 음식이다.

황교익이 호빵의 어원이 중국에서 들어와 호(胡)빵이라 한다고 잘못된 주장을 한 적이 있다.[2] 참고로 호떡의 경우에는 호(胡)떡이 맞다. 현재 제품화된 호빵은 일본의 제품을 모방한 것이다.

3.1. 안흥찐빵

찐빵 하면 특히 강원도 횡성군 안흥면에서 만드는 '안흥찐빵'이 유명하다. 안흥찐빵마을협의회는 안흥찐빵에 들어가는 팥은 국내산(강원도산)이고 기계가 아닌 수제작이어야 한다는 규칙을 정하고 수입산 팥을 쓰거나 기계제작하는 업체를 제명하여 송사에 휘말린 적이 있다. #

1980년대만 하더라도 횡성 일대를 오가던 사람들 정도나 알음알음 사먹었지만 외환위기 당시에는 '원조' 할머니의 파란만장한 인생사가 방송을 타면서 전국적인 유명세를 얻었다.

기록이 잘 보존되어 있는 연유로 현재까지도 원조 논란은커녕 원조 자체를 찾기 힘든 여타 음식들과 달리 안흥찐빵의 기원은 추적이 가능하다. 심순례[3] 안흥찐빵이 그 주인공인데 1968년 호떡 노점으로 시작하여 찐빵도 같이 팔다 아예 찐빵으로 전업하게 된 것이다. 당시 부족했던 상표권 인식 탓에 남들이 도용하기 시작했을 때는 이미 늦었지만 신지식인에 선정되어 청와대에 초청받고 김대중 대통령을 만났으며 식사에 안흥찐빵이 오를 정도로 인정받았다.#

4. 호빵과의 차이?

호빵은 밀가루 반죽 속에 단팥, 야채, 피자 토핑 등을 넣고 쪄서 먹는 찐빵을 상표화한 삼립호빵의 상표명에서 따왔으며, '온 가족이 호호 웃으며 함께 먹는다'는 의미로 이름이 지어졌다고 한다.

호빵은 사실 길거리 찐빵과 만두를 삼립에서 처음으로 공장제로 만든 식품에서 유래되었다.[4]

삼립에서 제조한 호빵은, 길거리 찐빵과는 약간의 차이가 있는데, 바로 빵 속에 들어가는 재료가 다르다는 것. 대부분 팥만 들어가는 찐빵과는 달리 호빵에는 치즈, 야채, 고기 등 다양한 재료를 넣어서 만드는 경우도 있다. 그리고 찐빵처럼 팥이 들어가는 호빵이라고 해도 찐빵과는 달리 거의 크림 수준으로 부드럽게 갈린 팥이 들어가기 때문에 팥껍질이나 팥알갱이가 씹히지 않는다. 간혹 나이 든 어르신들중 단팥외에 맛은 호빵이 아닌 만두로 취급하는 사람들이 있다.

5. 여담

이것을 삼립식품에서 상품화하여 출시하기도 했는데, 그것이 바로 삼립호빵이다. 찐빵이라는 단어를 고유명사로 상용화한 기업도 있는데 서울식품공업의 서울찐빵이다.

전국적으로 유명한 음식이지만, 가장 유명한 지역은 강원특별자치도 횡성군 안흥면으로, 안흥찐빵이 매우 유명하다. 아울러 같은 도 원주시 신림면 황둔찐빵, 대구광역시 달성군 가창면 가창찐빵골목도 유명하다.

사람이나 캐릭터의 얼굴이 동글동글하면서 통통하면 찐빵(혹은 찹쌀떡)같다고 표현하기도 한다. 통칭 빵떡. 내용물 없이 그냥 빵만있는 것이 만터우이다.

중국에서 호빵과 찐빵의 원형(原形)에 해당하는 또우사 빠오쯔(豆沙包子)라 불리는 빵이 존재한다. 또한 비슷한 형태에 속이 없는 만터우가 있다.[5]

호빵하면 생각나는 캐릭터는 뭐니뭐니 해도 날아라 호빵맨의 호빵맨으로 유명하다. 사실은 호빵이 아니고 단팥빵이지만, 기괴한 로컬라이징 때문에 이리 되었다. 김용만이 한때 호빵맨이라는 별명으로 유명했었고, 한국 내에서는 나고야의 태양으로 알려진[6] 선동열의 별명도 앙팡맨이었다.

아이맥 G4는 그 특유의 디자인 때문에 한국에서의 별명이 '호빵맥'이다. 다른 맥들의 별명은 이것저것 갈리지만 조개북(아이북 G3 초기형)과 함께 어떤 맥 커뮤니티에서든(?) 통하는 별명.

일본에서는 드래곤 퀘스트의 슬라임을 호빵으로 만들어서 패밀리마트에서 100만 개 한정 판매한 적이 있다. 개당 170엔이라는 비싼 가격에도 불구하고 없어서 못 팔았다고. 겉보기만 슬라임이고 속은 평범한 고기호빵이지만, 싱크로율이 높아 인기가 좋았다.

더 킹 오브 파이터즈 시리즈의 시이 켄수가 좋아하는 것이 일본의 야채호빵에 해당하는 니쿠만(肉まん)이다. 팥이나 피자맛은 안 좋아한다고 한다. 특히 피자맛은 게임 중 먹고 체하는 장면이 나온다.[7]

대구의 근교 휴양지라고 할 수 있는 가창면을 비롯해 전국의 휴양지(카페, 자연경관, 물놀이 스파 등이 있는)나 그곳으로 가는 길목에서 지역의 이름을 붙인 찐빵을 파는 경향이 있다. 그리고 놀랍게도 찐빵의 원형인 일본의 만쥬도 온천 마을과 같은 휴양지에서 지역 이름을 붙여 판매하는 정석 메뉴라는 공통점이 있으나 이쪽은 빵이 아니라 화과자에 해당하는 물건이다.

갓 데운 찐빵은 매우 뜨거운데, 특히 단팥이 들어간 찐빵은 단팥이 굉장히 뜨겁기 때문에 잘못하면 혀를 데일 수도 있다.

겨울철 편의점의 상징과도 같은 존재이다. 주요 편의점들은 매년 겨울 시즌(보통 10월~3월)마다 경쟁적으로 신제품과 이색적인 맛의 호빵을 출시하며 소비자를 공략한다. 단팥, 야채, 피자 위주에서 벗어나 크림치즈, 콘치즈, 고구마, 꿀씨앗, 민트초코 등 달콤한 디저트 계열부터 불닭, 찜닭, 마라, 로제 등 짭짤하고 매콤한 식사 대용 계열까지 맛이 다양해졌다.

태국에서는 살라빠오 (ซาลาเปา)라는 호빵의 형제격인 음식이 있다. 다만, 사이즈가 보통 호빵보다 작다. 한국에서 호빵이 일반적으로 계절 음식으로 여겨지는 것과 달리, 태국에서는 계절이나 시즌에 상관 없이 늘 판매한다.

[1] 호빵맨의 일본 명칭이 앙팡맨인 이유는 구워서 만든 단팥빵, 즉 앙꼬빵이기 때문이듯이, 앙망은 단팥을 넣어 쩌서 만든 빵이다. 한국에서는 호빵으로 번역이 되었지만, 원래 뜻은 '단팥빵+맨'으로, 호빵과는 관계가 없다.[2] 이는 황교익이 한국 음식 등에 걸핏하면 만물 일본유래설을 주장하면서도 정작 진짜로 일본에서 유래됐거나 참고한 게 무엇인지 실제로는 제대로 모르는 경우가 많다는 증거이기도 하다.[3] 2025년 6월 작고[4] 찐빵 자체는 일본의 츄카만(中華まん, 중화만두)에서 유래했다.[5] 국내에서도 시키면 한다! 약간 위험한 방송에서 만터우와 비슷한 속 없는 찐빵을 만들어 먹는 장면이 나온 적이 있었다.[6] 이 별명 자체가 첫 시즌이 시작하기도 전에 한국 언론에서 만들어졌다. 한참 지나서 일본으로 역수출되기도 하였다.[7] 일본 편의점에서 전부 판매하고 있다. 잘못 구입한 모양이다.
